Hey y'all... quick kitchen update.  Now back stateside and ready to get my 'cook' on! Working together with Annabella Creamery and Annabella Buffallo Mozarella so ome of my recipes will cross over and be featured on their facebook page as well.
I've missed you all in the past 2 years, been living abroad and experiencing a mildly different food palate, (That story is available via my personal blog https://dicksonbueno.wordpress.com).

Today I want to share with you a new easy yummy recipe I've created for Annabella Creamery (by the way, check them out on FACEBOOK and LIKE their page www.facebook.com/annabellacreamery)

For a quick and delicious party or football viewing snack I’ve put together an easy pizza recipe to try at home:

Easy-cheesy pizza bianca
What you’ll need:
• 8 - 12 ounces of Annabella Buffalo Mozzarella sliced (pat down the cheese with a paper towelto remove excess water)
• 4 12” round pieces of Whole grain or whole wheat pita bread (but any pita bread will do)
• 4 table spoons of EVO
• 2 Green bell peppers - julienned
• 2 Red bell peppers - julienned
• One large red onion finely chopped
• dash of thyme
• Salt & pepper

Prep: In a skillet over med/high heat sautée onion in EVO, adding a dash thyme. Salt & pepper to taste and allow to caramelize. Once sauteed, distribute onion over the 4 pita bread pieces as you would on a pizza. Cover each piece with sliced Annabella Buffalo Mozzarella. Place red and green bell pepper strips on each pizza (you’ll see the colors of the Italian flag pop up) and place in a 350° for about 8-10 minutes or until the edges of the pita bread start to crisp. Remove from the oven, slice and enjoy!

This is a very quick and easy recipe to enjoy as a snack, appetizer or even an individual meal.
You can use Tomato & Basil soft tortilla shells instead of pita bread, or get creative!
