Still got leftovers???

Hope everyone had a great Thanksgiving.  Some of you may already have leftovers left, some turkey perhaps and not quite sure what to do with it so I'm going to share with you two simple things you can create for a lighter lunch or meal.

Turkey & Buffalo mozzarella melt

What you'll need:
• Leftover turkey, white or dark is up to you
• Your choice of bread, whatever is left over usually works best
• About 2oz of fresh Annabella Buffalo Mozzarella sliced
• Few strips of roasted red pepper
• Fresh basil leaves
• Smidgen of mayo
• Smidgen of spicy mustard

One one of the bread slices spread a bit of mayo, on the other a bit of mustard.  Place the turkey on the piece with the mustard and the sliced Annabella buffalo mozzarella.  On the other place the roasted pepper strips.  Place in the oven to toast. Once done add the fresh basil, put together, cut in half, share and enjoy!

*** If you want to kick it up a notch and still have room for some additional calories, ad a sliver or two of avocado and a slice of crispy bacon!!!  YUMMMMM!
